Cinnamon Granola

This is one of the most delicious dishes I’ve knocked up…you simply do have to try it!

The dry ingredients are available to purchase from my shop pre-mixed, all ready to go-go-go, just add the vanilla extract and coconut oil…this saves you hunting down the individual ingredients from shop to shop!

 

Ingredients

1 cup (150g) almonds, roughly chopped*
1/2 cup (75g) cashew nuts, roughly chopped*
1.5 cups (80g) unsweetened coconut flakes*
1 tsp. ground cinnamon*
1/4 cup (35g) sunflower seeds*
1/4 tsp. salt*
1/2 tbsp. vanilla extract
1/8 cup (30ml) coconut oil, melted

 

*these are included in the pre-mixed dry ingredients.

Method

Pre-heat oven to 250F (120C) and prepare a baking sheet with parchment paper.
 
Mix the coconut oil, vanilla extract and cinnamon, set aside until required.
 
Chop up the almonds and cashew nuts and transfer into a large bowl. Add the coconut flakes, sunflower seeds, salt and mix well.
 
Fold the oil combination into the nuts and mix well until combined.
 
Spread the wet granola over the prepared baking sheet.
 
Place into the oven and bake for around 2 hours. Give the granola a mix every 20 min.
 
In the last 30 mins keep a close eye on the granola to prevent burning. Finish baking as granola turns golden brown. Cool to room temperature and transfer into airtight containers.

Use ¼ cup as a sprinkle on top of yoghurt & berries.
 
The granola will keep for a couple of weeks.
