Red Beans with Tomatoes, Chilli and Ginger

This super yummy dish is loaded with not only beautiful beans but a delightful array of fantastic cockle warming spices too, such as paprika, ginger and garlic!

Ingredients

1 white onion
2 red peppers
2 garlic cloves
5cm ginger
1 teaspoon paprika
1 teaspoon ground cumin
4 tablespoon olive oil sea salt flakes
400g tinned kidney beans*
400g tinned black-eye beans*
400g tinned tomatoes
3 spring onions

*Use these ingredients sparingly during your weight loss phase

Method

Preheat oven to 180oC

Tip the onion, peppers, garlic, ginger, spices, half the oil, and one teaspoon of sea salt flakes into a roasting tin large enough to hold them all in roughly one layer.

Mix well, then transfer to the oven and roast for 20 minutes.

After 20 minutes, take the beans, along with their liquid, the tinned tomatoes, remaining olive oil, spring onions and stir into the liquid.

Then return to the oven for 30 minutes.

Once cooked, taste and add more salt as needed.

Don’t worry if the source looks a little thin. It will thicken as it sits.

Scatter over the spring onions and serve with salad, stir fried vegetables, or your favourite Protein choice.
