This tasty dressing uses healthy olive oil to give the most creamiest and delicious mayonnaise I’ve ever tasted!
1 tsp Dijon mustard
2 tsp white wine vinegar or lemon juice
¼ tsp salt
1 cup light olive oil or avocado oil
Place all the ingredients into a beaker, big enough to use a stick blender.
Carefully insert the blender and push to the bottom of the beaker, make sure the blender covers the egg. Holding the blender at the bottom of the beaker, blend for at least 30 seconds without lifting it.
Slowly begin to lift the blender upwards through the mix, this will take a minute or two.
When the blender reaches the top start to move the blender up and down through the mayonnaise to mix well.
This Mayo will keep well in the fridge for up to a week.
