Spicy Tomatoes and Zoodles with Meatballs
You can’t beat a meatball with a delicious tomato sauce, spiced with cayenne pepper and paprika…a delight!
Ingredients
2 clove, Garlic
400 g, Tinned Tomatoes
1 tsp, Spices, paprika
1 tsp (2g), Cayenne Pepper (Ground)
1 tsp, Salt
200 g, Raw Courgette
200 grams, Onion
300 g, Mince
2 tbsp, Olive Oil
2 tsp, Mixed Dried Herbs
Method
Spiralise or Ribbon your Courgette*
Mix the herbs and salt into the mince, and form 1 inch balls.
Fry off in a little olive oil until brown.
While the meatballs are browning, warm the olive oil in a pan, fry off diced onions, then add chopped garlic and continue to fry for 2 minutes.
Add tomatoes, spice mix, and salt, combine and cook off for 10 minutes or so, then blitz with immersion blender.
Heat zoodles in microwave or warm through in a shallow pan using a little olive oil.
Place Zoodles in a dish and spoon over the sauce and top with the meatballs.
Serving suggestion; Top with grated parmesan cheese and accompany with a leafy, herby salad with tomatoes.
*Prepare a couple of hours earlier and lay on kitchen roll to reduce moisture content.
