Tuna & Avocado Cups

Tuna & Avocado Cups, chunky tuna combined with farm fresh eggs and velvety avocado, with the zingy addition of lemon juice.

Ingredients

1 can tuna in water, drained
1 medium avocado
1 small red onion, diced
1 small carrot, peeled and grated
1 hard-boiled egg, diced
1 tbsp. Greek yogurt
1 tsp. Dijon mustard
1 tbsp. lemon juice

Method

Scoop out the avocado flesh into a bowl, but save the skins.

Drain the tuna flakes and add, along with the rest of the ingredients, season with salt and pepper and combine.

Scoop the filling back into the Avocado Shells and enjoy.

Alternatively, you can serve on top of a crispy salad, in a Primal Wrap, or on top of Primal Crackers!
