Chocolate & Vanilla Chia Pudding

Decadently rich cocoa powder combined with sweet golden honey and a hint of vanilla, lightly whisked into coconut milk with nutty chia seeds make this flavour combination a true dessert winner.






4 hrs

4 tbsp. cocoa powder, unsweetened
2 tbsp. honey*
½ tsp. vanilla extract
1 cup (240ml) cartoned coconut milk
5 tbsp. chia seeds
1 tbsp desiccated coconut


Place cocoa powder, honey and vanilla extract in a bowl and mix until well combined.

Add the coconut milk and mix again.

Now add the chia seeds and whisk until combined.

Divide the mixture between 2 serving glasses, cover and refrigerate for at least 4 hours, or overnight.

Just before serving, sprinkle with the coconut and decorate with fruit.

Store in an airtight container in the refrigerator for up to 5 days.
