Creamy Mayonnaise

This homemade mayonnaise is a perfect blend of creamy and tangy flavours. Made with high-quality olive oil and fresh eggs, this mayonnaise is the perfect addition to any dish.

The rich taste of the olive oil pairs perfectly with the creamy texture of the egg, creating a luxurious and satisfying taste that will leave you wanting more.

1 egg
1 tsp Dijon mustard
2 tsp white wine vinegar or lemon juice
¼ tsp salt
1 cup olive oil or avocado oil

Place all the ingredients into a beaker, big enough to use a stick blender.

Carefully insert the blender and push to the bottom of the beaker, make sure the blender covers the egg. Holding the blender at the bottom of the beaker, blend for at least 30 seconds without lifting it.

Slowly begin to lift the blender upwards through the mix, this will take a minute or two.

When the blender reaches the top start to move the blender up and down through the mayonnaise to mix well.

This Mayo will keep well in the fridge for up to a week.
