Egg & Bacon Muffin Cups with Chilli

Farm fresh eggs cracked into a casing of cured bacon, topped with a grating of rich creamy cheese, finished with a sprinkle of hot chilli flakes and baked until golden.

6 bacon Rashers
6 eggs
50g grated cheese
1 tbsp olive oil
chili flakes
salt & pepper

Pre-heat oven to 170 degrees.

Lightly oil 6 muffin cups and line each well with bacon.

Crack the egg into the bacon cup, top with grated cheese, add a sprinkle of flaked chilli, and season.

Bake in the oven for 20ish mins until cooked…that’s it!

Notes:

Try sliced ham or turkey but be careful with processed meat as these can have added sugar.

These make great grab and go snacks, they freeze well and can be eaten cold.
