Gremolata Sauce

This sauce is a feast for your senses. The fresh parsley and garlic are intoxicating, and the olive oil makes it silky and smooth. It’s a great way to get your daily dose of fibre and antioxidants, and it’s also delicious on a variety of dishes. Drizzle it over fish, beans, or roasted vegetables for a flavourful and nutritious meal.

0.5 oz. (20g) parsley
2 cloves garlic, minced
zest of 1 lemon
4 fl oz. (120ml) olive oil
1 tbsp. lemon juice
¼ tsp. salt
¼ tsp. black pepper
¼ tsp. red pepper flakes

Place the parsley, garlic and lemon zest into a food processor and pulse to chop. Now add the olive oil, lemon juice and season with the salt, black pepper and red pepper flakes. Pulse again until well combined.

Pour the gremolata into an airtight container and store in the refrigerator for up to 10 days.

Serve as a topping with the Spicey Cannellini Beans with Poached Eggs, and other similar dishes.
