Raspberry Granola Trifle
Fresh juicy raspberries are blitzed with creamy cottage cheese, and smooth sweet honey to make this decadent dish. Layered with delicious cinnamon granola to delight not only the tastebuds but the desire for a sense of crunchiness too.
2 cups (450g) cottage cheese
10 oz. (300g) raspberries
1 tbsp. honey
8 tbsp. grain free Cinnamon Granola*

Place the cottage cheese, 2/3 of the raspberries and honey into a high-speed blender and blitz until smooth (you can also use Greek yoghurt instead of cottage cheese).
Keep the rest of the raspberries for garnish.
Prepare 4 not too big glasses or jars and layer the trifle.
Start with a layer of raspberry cheese, 1 tbsp of granola, and some fresh raspberries.
Continue until you use all of the ingredients.
Serve immediately or keep in the refrigerator until required.
* If applicable: You may wish to minimise the use of this ingredient during any weight loss phase due to the possible affect on blood sugar. Just omit it, or perhaps use an alternative / nutritional content is per serving.
